Roasted Pepper Greek Salad
- 1 box garlic couscous, prepared
- 2 each colored peppers
- 1 small Red onion, chopped
- 4 Green onions, chopped
- 1/2 cucumber, diced
- 1/2 cup feta cheese
- 3/4 cup kalamata olives
- 1 cup Greek dressing
- 1 pints cherry tomatoes, halved
- Roast peppers at 400F for 20 minutes or until burnt appearance.
- Allow to cool while chopping other veggies.
- Chop veggies.
- For cucumbers, peel 4 lengths down the width of the cucumber before chopping.
- Combine all ingredients.
- Chill in refrigerator.
