Roasted Pepper Greek Salad

  1. Roast peppers at 400F for 20 minutes or until burnt appearance.
  2. Allow to cool while chopping other veggies.
  3. Chop veggies.
  4. For cucumbers, peel 4 lengths down the width of the cucumber before chopping.
  5. Combine all ingredients.
  6. Chill in refrigerator.
