Skillet Cheese Puffs Recipe
- 1/3 pound Cheddar cheese, cut in 1/4 inch cubes (1 1/3 c.)
- 1/2 c. sifted flour
- 1 teaspoon baking pwdr
- 1/2 teaspoon salt
- 4 Large eggs
- 1 tbsp. chopped onion
- 1 tbsp. diced green pepper
- Mix flour, baking pwdr and salt.
- Beat Large eggs slightly with hand or possibly electric beater.
- Lightly stir in flour, then cheese, onion, green pepper.
- Drop by spoonfuls into small amount of warm melted shortening in skillet; brown slowly, turning once.
- Takes about 3 min.
- Place on paper toweling and serve at once, with a creamed vegetable, ketchup or possibly chili sauce.
- Makes 12 to 16 puffs.
