Cheese Potatoes In The Microwave

  1. Pierce potatoes with a fork.
  2. Do not peel.
  3. Place in microwave on a paper towel.
  4. Cook on High for 20 minutes or until done. Cool slightly; do not peel.
  5. Slice and set aside.
  6. Place margarine in glass microwave-safe bowl.
  7. Cook at High for 2 to 3 minutes to melt.
  8. Remove from oven and stir in cheese.
  9. When cheese melts, add sour cream, salt, pepper and onions.
  10. Gently stir cheese mixture into potatoes.
  11. Spoon in microwave-safe 8 x 10-inch baking dish.
  12. Top with paprika.
  13. Cook, uncovered, on High power for 7 to 8 minutes.
  14. Serves 8.
