Cheese Potatoes In The Microwave
- 6 medium potatoes, unpeeled
- 8 Tbsp. margarine
- 8 oz. shredded Cheddar cheese
- 8 oz. sour cream
- 1 tsp. salt
- 1/2 tsp. white pepper
- 1/2 c. chopped green onions, including tops
- paprika for topping
- Pierce potatoes with a fork.
- Do not peel.
- Place in microwave on a paper towel.
- Cook on High for 20 minutes or until done. Cool slightly; do not peel.
- Slice and set aside.
- Place margarine in glass microwave-safe bowl.
- Cook at High for 2 to 3 minutes to melt.
- Remove from oven and stir in cheese.
- When cheese melts, add sour cream, salt, pepper and onions.
- Gently stir cheese mixture into potatoes.
- Spoon in microwave-safe 8 x 10-inch baking dish.
- Top with paprika.
- Cook, uncovered, on High power for 7 to 8 minutes.
- Serves 8.
