Top Chef Stefan Richter's Pastrami on Rye
- 4 tbsp. mayonnaise
- 1 tbsp. sour cream
- 2 tbsp. horseradish
- 1/2 tsp. chopped fresh parsley
- 2 tbsp. ketchup
- 1/2 tsp. fresh thyme
- salt
- Pepper
- 8 tbsp. mayonnaise
- 4 tbsp. vinegar
- salt and pepper
- 2 tbsp. chopped fresh parsley
- 1 tsp. chopped fresh thyme
- 1 bag Shredded cabbage
- 4 slice Jewish rye bread
- 2 tbsp. Dijon mustard
- 10 oz. pastrami
- 6 slice Swiss cheese
- 2 slice Bavaria blue cheese
- 4 tbsp. horseradish sauce
- Prepare the horseradish sauce: In a bowl, mix together all the ingredients.
- Season with salt and pepper to taste.
- Prepare the coleslaw: In a bowl, mix together mayonnaise, vinegar, parsley, and thyme, until blended.
- Add shredded cabbage and combine.
- Season with salt and pepper to taste.
- Prepare the sandwiches: On a work surface, place 2 slices of rye bread and spread each with 1 tablespoon Dijon mustard.
- Layer each bread slice with 4 oz.
- pastrami followed by 3 slices Swiss cheese and 1 slice Bavaria blue cheese.
- Spread 2 tablespoons horseradish sauce on the remaining 2 slices and place dressing-side down on top of cheese.
- Press in a panini maker for 4 minutes and serve with the coleslaw and extra horseradish sauce for dipping.
