Bacon & Egg Arepas

  1. Mix water and salt in large bowl.
  2. Gradually stir in cornmeal.
  3. Add cream cheese and cilantro; mix well.
  4. Let stand 5 min.
  5. Divide dough into 6 equal pieces; shape each into ball.
  6. Flatten each ball into 5-inch patty, rounding edge with a little water, if necessary.
  7. Heat griddle to medium-high heat.
  8. Add patties (arepas); cook 10 to 12 min.
  9. on each side or until golden brown on both sides.
  10. Meanwhile, cook eggs until set, stirring occasionally.
  11. Cut arepas horizontally in half; fill with eggs, Singles and bacon.
