Applesauce Recipe Sandsquish

  1. Peel, core and coarsely chop the apples.
  2. Combine the chopped apples, sugar and pumpkin pie spice in a 6-cup glass bowl.
  3. Stir to mix.
  4. Cover with plastic wrap and set in a microwave oven.
  5. Cook with 650 watts for 5 minutes.
  6. Remove from the oven, uncover and stir in butter and optional brandy.
  7. Recover and cook until fruit is completely soft, about 3 minutes.
  8. Remove from the oven, uncover and mash mixture with a potato masher.
  9. Let cool to room temperature, then chill.
  10. Serve with roast pork or pork chops, or with cookies for dessert.
