Green Chili Corn Casserole
- 4 cups Fresh Corn Removed From The Cob
- 1 package (8 Oz) Full Fat Cream Cheese
- 3 Tablespoons Butter, Any Kind You Prefer
- 1 can Diced, Fire Roasted Green Chilies
- 1 pinch Salt And Pepper, to taste
- Begin by removing the fresh corn from the cob.
- I do this by setting a large mixing bowl on the cabinet and placing the next largest mixing bowl inside the larger one, upside down.
- Place the corn cob on top of the upside down bowl for stability and use a large knife to slide down the cob removing the kernels.
- While you are cutting, the corn is falling down into the larger mixing bowl.
- Just so you know, I aint hoity toityIll reach in that freezer and pull out the frozen stuff just as fast!
- and its ridiculously good still!
- Place your four cups of corn into a medium casserole dish.
- In a separate mixing bowl, add your cream cheese, butter and green chilies.
- Place in microwave for 30 seconds to a minute.
- Just enough time to soften the cheese and melt the butter.
- Mix very well.
- Pour over top of the corn and add salt and pepper.
- Mix all very well.
- Bake until bubbly for about 20 minutes at 350.
- SLURP!
- So good!
