Eggnog Martini
- 1 cup sugar
- 14 cup cornstarch
- 1 teaspoon freshly grated nutmeg
- 1 teaspoon pumpkin pie spice, plus more for garnish
- 8 cups whole milk, divided
- 6 large egg yolks
- 3 cups brandy
- Place a mesh strainer in a large non-glass bowl set in an ice water bath.
- Set aside.
- In a medium saucepan, off heat, stir together sugar, cornstarch and spices.
- Whisk in 4 cups cold milk, being sure to dissolve cornstarch.
- Whisk in egg yolks.
- Over medium heat, whisk constantly until large bubbles start to form, 10-12 minutes.
- Reduce heat to low and cook 1 minute more, still whisking constantly.
- Remove from heat and pour through sieve into bowl.
- Whisk in remaining cold milk.
- Allow to remain in ice bath until fully cold.
- Stir in brandy just before serving.
- Serve in martini glasses garnished with a pinch of pumpkin pie spice.
