Aubergine Balls Recipe
- 3 Tbsp. Extra virgin olive oil
- 3 x Cloves Garlic, chopped
- 1 lrg Aubergine, peeled and diced
- 1 Tbsp. Water
- 1 c. Seasoned Bread Crumbs
- 1/2 c. Fresh Parsley, minced
- 2 x Large eggs, beaten
- 1/2 c. Grated Cheese Extra virgin olive oil Marinara Sauce Mozzarella Cheese
- In large saucepan, heat oil and gently saute/fry garlic till golden.
- Add in diced aubergine, water, and cover.
- Reduce heat and gently steam till aubergine is very soft.
- In mixing bowl, combine aubergine, bread crumbs, parsley, Large eggs and cheese.
- Mix well and let stand 20 min.
- Form into balls and fry on all sides in extra virgin olive oil.
