Crock Pot Indian Pudding Recipe
- 3 c. lowfat milk
- 1/2 c. cornmeal
- 1/2 teaspoon salt
- 3 Large eggs
- 1/4 c. light brown sugar
- 1/3 c. molasses
- 2 tbsp. butter
- 1/2 teaspoon cinnamon
- 1/4 teaspoon allspice
- 1/2 teaspoon ginger
- Lightly grease crock.
- Preheat on high for 20 min.
- Meanwhile bring lowfat milk, cornmeal and salt to a boil.
- Boil, stirring constantly, for 5 min.
- Cover and simmer an additional 10 min.
- In a large bowl, combine remaining ingredients.
- Gradually beat in warm cornmeal mix and whisk till smooth.
- Pour into crock and cook on high for 2 to 3 hrs or possibly low for 6 to 8 hrs.
