White Christmas Pie
- 1 envelope unflavored gelatin
- 1/4 c. cold water
- 1/2 c. sugar
- 1/2 tsp. salt
- 4 Tbsp. flour
- 1 1/2 c. milk
- 3/4 tsp. vanilla
- 1/4 tsp. almond extract
- 1/2 c. heavy cream, whipped
- 3 egg whites
- 1/4 tsp. cream of tartar
- 1/2 c. sugar
- 1 c. moist coconut
- Soften gelatin in cold water.
- Mix in saucepan the 1/2 cup sugar, salt, flour and milk.
- Cook over low heat, stirring mixture until it boils.
- Boil 1 minute.
- Remove from heat.
- Stir in dissolved gelatin.
- Cool.
- When mixture is partially set, beat with beater until smooth.
- Blend in vanilla and almond extract.
- Whip cream until stiff.
- Beat until fluffy the egg whites.
- Add cream of tartar and 1/2 cup sugar.
- Beat until stiff and glossy.
- Fold into custard.
- Fold in coconut.
- Put in baked pie shell.
- Sprinkle coconut on top.
- Chill until set.
