Croutons With Chevre and Red Peppers

  1. Cut a baguette into 1/4-inch slices.
  2. Brush the slices lightly with olive oil and bake at 350F for 10 minutes, or until they are light brown.
  3. Beat/mix the chevre and its marinade until the mixture is creamy.
  4. Spread a thin layer of cheese on each crouton and top with a strip of roasted and peeled sweet red pepper.
  5. Place the croutons under the broiler until bubbly.
  6. Serve at once.
