German Sweet Potato Salad

  1. Prick the sweet potatoes with a fork, and microwave them on high just until they are tender, about 7 minutes, turning them halfway through the cooking.
  2. Let the sweet potatoes cool until they can be handled.
  3. Meanwhile, place the cauliflower in a large microwave-safe dish.
  4. Cover it tightly and microwave on high until just cooked through, about 5 minutes.
  5. Let cool slightly.
  6. Peel the sweet potatoes and cut them into large dice.
  7. In a large bowl, whisk together the white wine vinegar and Truvia.
  8. Add the sweet potatoes, cauliflower, scallions, bacon bits, and parsley; toss to coat.
  9. Season the salad with salt and pepper to taste, and serve.
