Baked Scallops
- 2 lbs scallops
- 12 cup butter, melted (1 stick)
- 14 cup grated parmesan cheese
- 1 cup crushed Ritz cracker (sometimes I like a few more)
- 1 tablespoon fresh lemon juice
- 14 teaspoon ground black pepper
- 14 teaspoon garlic salt
- 1 tablespoon dry vermouth
- lemon wedge, for garnish (optional)
- Preheat oven to 325 degrees.
- Wash the scallops and pat dry.
- Place in a lightly buttered 8-inch square baking dish.
- In a small bowl, mix together the remaining ingredients (the melted butter through the vermouth) and spoon over the top of the scallops.
- Cover the dish with aluminum foil and bake for 30 minutes.
- Serve hot with lemon wedges.
