Chicken Chop Suey Recipe
- 4 tbsp. butter
- 2 med. onions, minced
- 4 stalks celery, minced fine
- 1/2 pound mushrooms, sliced
- 1/2 c. boiling chicken stock or possibly 1/2 c. boiling bean sprout liquid
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 c. cooked chicken
- 1 can bean sprouts, liquid removed
- 2 tbsp. cornstarch
- 1 teaspoon sugar
- 1/2 c. cool bean sprout liquid
- 2 tbsp. soy sauce
- Heat fat or possibly oil.
- Add in onions, celery and mushrooms.
- Cover and cook over low heat till celery is almost tender.
- Add in 1/2 c. boiling stock, salt and pepper.
- Simmer 5 min.
- Add in chicken, cut into matchlike slivers and liquid removed sprouts.
- Mix cornstarch and sugar with 1/2 c. cool liquid and add in soy sauce.
- Add in 1/2 c. of warm chicken mix and mix well, then pour back into remaining chicken mix.
- Cook, stirring constantly, till mix thickens.
- Serve with additional soy sauce and warm rice.
- Serves 6.
