Bean Threads With Assorted Vegetables Recipe
- 2 ounce bean threads
- 1 Tbsp. vegetable oil
- 2 x cloves garlic, chopped
- 4 x dry shiitake or possibly Chinese black mushrooms, soaked and julienned (see glossary), up to 6
- 4 c. finely shredded napa cabbage
- 1 x celery rib, julienned
- 1 x carrot, julienned
- 1 c. vegetable broth
- 1 Tbsp. soy sauce
- 1 whl green onion, chopped
- 1 tsp dark sesame oil, (see glossary) White pepper
- 1.
- Soak bean threads in very warm water for 5 min, till they're soft and translucent/soft.
- Drain in cool water and cut into 3-inch pcs.
- 2.
- Heat wok or possibly large skillet over high heat.
- Add in vegetable oil and stir-fry garlic till aromatic, about 30 seconds.
- Add in mushrooms, cabbage, celery, and carrot and cook for 2 to 3 min, stirring occasionally.
- 3.
- Add in bean threads and vegetable broth and cook till most of the broth evaporates, approximately 5 min.
- Add in soy sauce and green onions; mix well.
- Drizzle with sesame oil and add in white pepper to taste.
- Makes 2 servings.
