Roasted Cherry Tomato Pasta
- 8 cups Pasta
- 2 pints Cherry Or Grape Tomatoes
- 1 whole Small Red Onion
- 4 Tablespoons Olive Oil
- 1 Tablespoon Balsamic Vinegar
- 1/2 teaspoons Sea Salt
- 1/2 teaspoons Pepper
- 4 Tablespoons Fresh Basil
- 1.
- Preheat oven to 425F.
- 2.
- Slice tomatoes into quarters or halves.
- Slice red onion into 1/4 thick slices.
- 3.
- Toss tomatoes and onions with olive oil, balsamic vinegar, salt and pepper.
- Spread mixture in a single layer (or close to a single layer) in a large glass baking dish.
- 4.
- Cook in the oven for about 45 minutes, stirring twice, or until the tomatoes and onions are lightly browned but not black.
- 5.
- In the meantime, cook the pasta in salted water and drain.
- 6.
- Combine pasta with tomato/onion mixture and basil.
- Taste and adjust seasoning if necessary.
- Enjoy!
- Optional: serve with Parmesan cheese.
