Roasted Cherry Tomato Pasta

  2. Preheat oven to 425F.

  4. Slice tomatoes into quarters or halves.
  5. Slice red onion into 1/4 thick slices.

  7. Toss tomatoes and onions with olive oil, balsamic vinegar, salt and pepper.
  8. Spread mixture in a single layer (or close to a single layer) in a large glass baking dish.
  9. 4.
  10. Cook in the oven for about 45 minutes, stirring twice, or until the tomatoes and onions are lightly browned but not black.
  11. 5.
  12. In the meantime, cook the pasta in salted water and drain.
  13. 6.
  14. Combine pasta with tomato/onion mixture and basil.
  15. Taste and adjust seasoning if necessary.
  16. Enjoy!
  17. Optional: serve with Parmesan cheese.
