Tuna Potato Casserole Recipe
- 1 pound potatoes, peeled & cut in 1/2 inch cubes
- 1 shallot, minced
- 1/4 c. water
- 1/2 teaspoon salt
- Dash of pepper
- Paprika
- 1 can tuna, liquid removed
- 1 (10 ounce.) pkg. frzn peas
- 1 (10 3/4 ounce.) can cream of mushroom soup
- 1/2 c. potato chips, crushed
- Lemon juice
- Combine potatoes, shallot, water, salt and pepper in 2 qt casserole.
- Cover and cook on high 3 min, remove.
- Layer peas and tuna over potatoes.
- Sprinkle with lemon juice.
- Spoon undiluted soup over tuna layer.
- Sprinkle with paprika.
- Cover and cook 5 more min.
- Sprinkle crushed potato chips over top before serving.
- Serves 4.
