Jeff's Hash Brown Casserole

• 32 ounces frozen hash browns
• 1 small onion
• 1 (10 1/2 ounce) can cream of mushroom soup
• 16 ounces sour cream
• 8 ounces cheddar cheese (shredded or preferred flavor)
• seasoning (optional)
• jalapeno (optional)
• cubed ham (optional)

1. Pre-heat oven to 350 degrees.
2. Combine sour cream, soup and onions.
3. Mix well.
4. Fold in the hashbrowns.
5. Fold in 3/4 of the cheese.
6. Place into 9 by 13 baking dish, smooth mixture and top with remaining cheese.
7. Bake for 45 minutes or until the edges of the cheese begin to brown.
