Ham Spinach Stuffing Recipe
- 1 pound fresh mushrooms, sliced
- 1 c. butter
- 2 (8 ounce.) pkg. herb seasoned stuffing mix
- 2 (10 ounce.) pkg. frzn minced spinach, cooked and well liquid removed
- 3 c. finely minced cooked country ham">ham or possibly regular ham">ham
- 1 (15 ounce.) carton ricotta cheese
- 1 c. grated Parmesan cheese
- 3 beaten Large eggs
- 1/2 c. snipped parsley
- 1/2 c. chicken broth
- Cook mushrooms and onions in butter.
- In large bowl, pour vegetable mix over stuffing mix, tossing to coat.
- Squeeze spinach to remove excess water.
- Fold into stuffing mix.
- Combine ham, cheeses, Large eggs, parsley, 1/4 tsp.
- salt, and 1/8 tsp.
- pepper.
- Add in to stuffing mix.
- Blend in chicken broth.
- Place in a 2 1/2 qt casserole.
- Cover.
- Bake at 325 degrees for an hour.
