Beer Braised Sirloin Chili

  1. Marinade:.
  2. Cut sirloin in 4 pieces, about 8 ounces each.
  3. Marinate in oil, lime, garlic, cilantro, black pepper and jalapenos for at least 3 hours (overnight is best).
  4. After marinating, grill meat to medium doneness on an open flame using hickory or mesquite, if possible.
  5. Let meat cool, then dice into 1/2" x 1/2" cubes and set aside.
  6. Chili:.
  7. In a large sauce pot, add oil and saute onions and garlic until translucent.
  8. Add in meat and cook on medium heat until most of the moisture is gone.
  9. Add ancho chili powder, comino and coriander, then deglaze with beer.
  10. Continue cooking on medium heat until meat is tender and sauce starts to thicken.
  11. Add diced chilis and finish with kosher salt, lime juice, and garnish with green onions and chopped cilantro.
