Simple Lemon Roast Chicken
- 1 whole Chicken, Thawed, And Rinsed
- 1 whole Lemon
- 1 teaspoon Italian Seasoning
- 1/2 teaspoons Sea Salt
- 3 Tablespoons Oil
- Preheat oven to 350F.
- Rinse the whole chicken and pat it dry.
- Pour 2 tablespoons of oil into the bottom of an oven-proof casserole that has a lid, and put the chicken in the casserole.
- Drizzle oil all over the chicken.
- Cut the lemon in half.
- Cut one half into thin slices, and cut the remaining half into 2 pieces.
- Sprinkle Italian seasoning all over the oiled chicken.
- Season with salt.
- Then place lemon slices on top of the seasoning.
- Jam the remaining 2 pieces of lemon into the chicken cavity.
- Cover the casserole and place in the oven.
- Bake for 2 hours, taking the lid off for the last 20 minutes or so to brown and crisp up the skin.
