Simple Lemon Roast Chicken

  1. Preheat oven to 350F.
  2. Rinse the whole chicken and pat it dry.
  3. Pour 2 tablespoons of oil into the bottom of an oven-proof casserole that has a lid, and put the chicken in the casserole.
  4. Drizzle oil all over the chicken.
  5. Cut the lemon in half.
  6. Cut one half into thin slices, and cut the remaining half into 2 pieces.
  7. Sprinkle Italian seasoning all over the oiled chicken.
  8. Season with salt.
  9. Then place lemon slices on top of the seasoning.
  10. Jam the remaining 2 pieces of lemon into the chicken cavity.
  11. Cover the casserole and place in the oven.
  12. Bake for 2 hours, taking the lid off for the last 20 minutes or so to brown and crisp up the skin.
  13. The aroma in your kitchen will be wonderful!
