Annie P's Watermelon Rind Pickles Recipe
- rind of one large watermelon
- 1/4 c. pickling salt
- 4 c. water
- 8 c. sugar
- 4 c. cider vinegar
- 2 Tbsp. whole cloves
- 5 x cinnamon, sticks
- 2 Tbsp. whole allspice
- Remove all red and pink watermelon flesh from the rind.
- Cut rind into 1 inch cubes.
- Add in pickling salt to 4 c. water.
- Immerse watermelon cubes and soak overnight.
- Drain thoroughly the next day.
- Cover watermelon in a large pot with fresh cool water.
- Simmer about 7 min till rind is almost tender.
- Drain thoroughly.
- Combine sugar and vinegar in a large pot.
- Tie spices in a cheesecloth and add in to the pot.
- Bring to a boil and simmer, uncovered, for 5 min.
- Add in liquid removed watermelon rind to brine.
- Simmer for 15 min or possibly till rind is clear and translucent/soft.
- Throw away spice bag.
- Pack rind into sterilized jars.
- Fill each jar to within 1/4 inch of brim with warm brine.
- Seal immediately.
- Yield: 8 pints/4 litres/16 c.
