Annie P's Watermelon Rind Pickles Recipe

  1. Remove all red and pink watermelon flesh from the rind.
  2. Cut rind into 1 inch cubes.
  3. Add in pickling salt to 4 c. water.
  4. Immerse watermelon cubes and soak overnight.
  5. Drain thoroughly the next day.
  6. Cover watermelon in a large pot with fresh cool water.
  7. Simmer about 7 min till rind is almost tender.
  8. Drain thoroughly.
  9. Combine sugar and vinegar in a large pot.
  10. Tie spices in a cheesecloth and add in to the pot.
  11. Bring to a boil and simmer, uncovered, for 5 min.
  12. Add in liquid removed watermelon rind to brine.
  13. Simmer for 15 min or possibly till rind is clear and translucent/soft.
  14. Throw away spice bag.
  15. Pack rind into sterilized jars.
  16. Fill each jar to within 1/4 inch of brim with warm brine.
  17. Seal immediately.
  18. Yield: 8 pints/4 litres/16 c.
