Peppermint Brownies
- 1 cup butter or margarine
- 5 (1 oz.) unsweetened chocolate squares
- 5 eggs
- 2 1/4 cups sugar
- 2 tsp. vanilla
- 1/2 tsp. peppermint extract
- 1 3/4 cups sifted flour
- 1 tsp. salt
- 1 cup chopped pecans
- peppermint frosting

- Combine butter and 5 oz. chocolate in saucepan.
- Melt over low heat.
- Cool to room temperature.
- Combine eggs and sugar, beat on high two minutes.
- Add cooled chocolate mixture, vanilla, and peppermint extract.
- Blend well.
- Sift flour and salt.
- Add dry ingredients to chocolate mixture.
- Mix well.
- Stir in pecans. Pour into jelly roll pan, 15 1/2 x 10 1/2 x 1 inch.
- Bake in 325 degree oven for 25 minutes or until done.
- Cool.
- Frost with peppermint frosting.
- Melt 1/2 oz. chocolate and drizzle over frosting.
