Extra Cheesy Party Crostini (with Bacon)
- 1 loaf Baguette, Cut Into 1/2 Inch Slices
- 1/4 cups Olive Oil
- 1/2 teaspoons Sea Salt
- 5 strips Bacon, Fully Cooked And Diced
- 1 cup Swiss Cheese, Grated
- 1 cup Pepper Jack Cheese, Grated
- 1/2 teaspoons Black Pepper
- 1/2 teaspoons Chili Powder
- 1/4 cups Mayonnaise (use More As Needed)
- 2 Tablespoons Green Onions, Sliced, For Garnish
- Line a large baking sheet with parchment paper and preheat the oven to 375 F.
- Lay out your baguette slices on the baking sheet, brush each one with olive oil and sprinkle with salt.
- Bake at 375 F for 3-4 minutes or until they begin to brown slightly.
- Remove from oven and set aside.
- In a bowl, combine the bacon, cheeses, black pepper, chili powder and mayonnaise.
- Stir until combined.
- If you find the mixture isnt holding together, add more mayo until it does.
- Onto each toasted crostini, dollop a teaspoon of cheese mixture.
- Then add additional until you have used it all.
- Pop the toasts back in the oven and cook for 3-4 minutes more, or until the cheese is melted and bubbly.
- Remove from oven and garnish with green onions.
- Serve immediately and enjoy!
