Beef Enchiladas Recipe

  1. Cook and stir beef in large skillet till light brown; drain.
  2. Remove from heat and stir in 1 1/2 c. cheese, onions, lowfat sour cream, parsley, salt and pepper.
  3. Cover and reserve.
  4. Heat remaining ingredients to boiling; reduce heat.
  5. Simmer uncovered 5 min.
  6. Proportionately divide the beef mix onto each tortilla; roll tortilla around filling.
  7. Arrange in ungreased oblong 9x13 inch baking dish.
  8. Pour sauce over enchiladas; sprinkle with remaining cheese.
  9. Cook uncovered in 350 degree oven till bubbly, about 20 min.
