Fresh Broccoli Salad
- 1 egg plus 1 egg yolk, lightly beaten
- 1/2 c. sugar
- 1 1/2 tsp. cornstarch
- 1 tsp. mustard
- 1/4 c. water
- 1/4 c. tarragon wine vinegar
- 3 Tbsp. softened margarine
- 1/2 c. mayonnaise
- 4 c. broccoli florets
- 1/2 c. raisins
- 6 slices cooked, crumbled bacon
- 2 c. fresh sliced mushrooms
- 1/2 c. toasted sunflower seeds
- 1 can mandarin oranges, chopped
- Whisk together egg and yolk, sugar, cornstarch and mustard. Combine vinegar and water, then pour into egg mixture.
- Whisk constantly over medium heat until sauce thickens.
- Remove from heat.
- Stir in margarine and mayonnaise.
- Chill.
- Toss remaining ingredients together and pour dressing over; mix.
