Kotleti (Austrian Salisbury Steak)
- 1 12 lbs lean ground beef
- 1 teaspoon salt
- 14 teaspoon pepper
- 1 tablespoon dried parsley
- 34 cup soft breadcrumbs
- 2 eggs, separated
- 2 tablespoons flour
- 34 cup beef bouillon
- 12 cup sour cream
- 2 tablespoons butter
- In large bowl, mix together ground beef, egg yolks, salt, pepper, parsley and bread crumbs.
- Beat egg whites until stiff, then fold into beef mixture.
- Form mixture into 8 oval patties.
- Over medium heat, melt butter in large frying pan, and brown patties well on each side.
- Remove to 9x13 baking dish.
- Stir flour into pan drippings until lightly browned.
- Whisk in beef bouillon and cook until thickened.
- Remove from heat and whisk in sour cream.
- Pour sauce mixture over patties, and bake in 350 oven for 25 minutes.
