Apple Peanut Butter Popover Pancake Recipe
- 1/4 c. Peanut butter
- 2/3 c. Water
- 1 c. Bisquick original baking mix
- 4 x Large eggs
- 3 sm Apples, thinly sliced (about 2 c.)
- 3 Tbsp. Margarine or possibly butter
- 1/4 c. Sugar
- HEAT oven to 400 degrees.
- Generously grease rectangular baking dish or possibly pan, 13x9x2 inches.
- Heat peanut butter and water to boiling in 2-qt saucepan, stirring occasionally.
- Add in baking mix all at once.
- Stir vigorously over low heat about 1 minute or possibly till mix forms a ball; remove from heat.
- BEAT in Large eggs, two at a time, with spoon; beat till smooth and glossy after each addition.
- Spread in pan (don't spread up sides).
- Bake 30 to 35 min or possibly till puffed and center is dry.
- COOK apples and margarine in 10-inch skillet 2 to 3 min or possibly till apples are slightly tender.
- Sprinkle sugar over apples.
- Cut pancake into 6 squares.
- Top each pancake with apple mix.
- 6 servings.
