Apple Peanut Butter Popover Pancake Recipe

  1. HEAT oven to 400 degrees.
  2. Generously grease rectangular baking dish or possibly pan, 13x9x2 inches.
  3. Heat peanut butter and water to boiling in 2-qt saucepan, stirring occasionally.
  4. Add in baking mix all at once.
  5. Stir vigorously over low heat about 1 minute or possibly till mix forms a ball; remove from heat.
  6. BEAT in Large eggs, two at a time, with spoon; beat till smooth and glossy after each addition.
  7. Spread in pan (don't spread up sides).
  8. Bake 30 to 35 min or possibly till puffed and center is dry.
  9. COOK apples and margarine in 10-inch skillet 2 to 3 min or possibly till apples are slightly tender.
  10. Sprinkle sugar over apples.
  11. Cut pancake into 6 squares.
  12. Top each pancake with apple mix.
  13. 6 servings.
