Roast Chicken with Leeks

  1. Preheat oven to 325F (160C)
  2. Rinse and wipe chicken with paper towel.
  3. Place breast-side down in a roasting pan.
  4. Stuff cavity with lemon and garlic.
  5. Slice leeks in half lengthwise.
  6. Place cut-side down in roasting pan alongside chicken.
  7. Sprinkle with salt and pepper.
  8. Pour in 3/4 cup (175 mL) water (see Notes.)
  9. Cover tightly.
  10. Roast in preheated oven for 40 minutes.
  11. Remove from oven and transfer leeks to a dish and keep warm.
  12. Return chicken to oven.
  13. Continue roasting, uncovered, for about 1-1/2 hours or until meat thermometer registers 180F (82C).
  14. Remove chicken from oven.
  15. Let stand for 5 minutes before carving.
  16. Serve with leeks and any pan juices.
