Bacon Topped Mini Meatloaf
- 1 lb lean ground beef
- 1 lb Italian sausage or 1 lb turkey Italian sausage
- 1 egg
- 34 cup Italian seasoned breadcrumbs
- 1 teaspoon onion powder
- 12 teaspoon pepper
- 12 cup mozzarella cheese, shredded
- 12 cup ketchup
- 2 tablespoons brown sugar
- 4 slices pepper bacon, cut into quarters topped with pepper or 4 slices regular bacon, topped with pepper
- Combine all ingredients together except the bacon, ketchup and brown sugar.
- Spray a 12x9 glass casserole dish with cooking spray and press the mixture into the pan.
- Cut down the center length ways and then cut each half into quarters.
- Once cut, form loaves out of each section making sure that the edges of one loaf does not touch another.
- Mix ketchup and brown sugar together thoroughly then brush on top of loaves.
- Finally, top each loaf with 1/2 of a strip of bacon.
- Bake at 450 for approximately 20 minutes.
