Holiday Cherry Gelatin Pie

  1. Drain the cherries reserving 2 tablespoons of the juice.
  2. In a large saucepan combine 1 cup plus 2 tablespoons sugar and flour.
  3. Stir in the crushed pineapple with juice, cherries and the 2 tablespoons reserved cherry juice; bring to a boil, cook stirring for about 2 minutes, or until thickened; remove from heat.
  4. Add in the cherry gelatin powder; stir until dissolved, then stir in the red food colouring.
  5. Chill until PARTIALLY set.
  6. Stir in the sliced bananas and nuts.
  7. Pour into baked and cooled pie shell.
  8. Refrigerate for a minimum of 3 hours until completely set before serving.
  9. Slice and dollop with whipped cream or Cool Whip topping, or spread the whipped cream on top of the pie and then slice.
