Nacho Pie
- 7 ounces, weight Tortilla Chips
- 2 whole Eggs
- 1- 1/2 cup Grated Cheddar Cheese
- 1/2 cups Your Favourite Salsa
- 1 whole Green Or Red Pepper, Stem And Seeds Removed, Sliced
- Preheat oven to 400 F.
- Process tortilla chips in a food processor until they form fine crumbs.
- Crack 2 eggs into the crumbs and process until mixture begins to cling together.
- Press mixture over the surface of 12-inch pizza pan.
- It wont seem like enough, but wet your hands and persist.
- I often finish up by rolling it out a bit more with a full beer bottle or jam jar.
- Bake crust for 10 minutes.
- Remove it from the oven and top with half of the cheese, then top with the salsa, pepper slices and a last layer of cheese.
- Bake until the cheese melts, about 4 minutes.
- Remove from oven.
- Serve cut into wedges.
