Lower-Fat Caesar Dressing
- 1 cup extra virgin olive oil
- 1 cup nonfat plain yogurt
- 13 cup apple cider vinegar
- 3 (2 ounce) cans anchovies or 4 tablespoons anchovy paste
- 3 eggs
- 2 tablespoons Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1 tablespoon garlic powder
- 1 12 teaspoons salt
- 1 teaspoon pepper
- Combine vinegar, eggs, Worcestershire sauce, mustard, garlic powder, salt, and pepper in a blender and mix.
- Add yogurt and either anchovies or anchovy paste and blend together thoroughly.
- In a slow stream add olive oil through the hole in the lid.
- Refrigerate dressing until ready to use.
