Japanese-Style Daikon Radish Curry

  1. Peel the daikon radish, and cut into 1cm chunks.
  2. Finely chop the daikon radish leaves and boil in salted water.
  3. Coat a frying pan with oil, and stir-fry the minced chicken.
  4. Add daikon radish and cook until nicely browned.
  5. Pour the Japanese dashi stock into the pan and simmer.
  6. Once the daikon radish is tender, add the curry roux and dissolve.
  7. (Add water if needed.)
  8. Transfer the cooked rice to a serving plate and pour the curry on top.
  9. Garnish with chopped daikon radish leaves.
