Pork Pitas With Speedy Salsa

  1. Heat olive oil in large skillet over medium heat; add diced pork tenderloin and saut 3 to 4 minutes.
  2. Stir in taco seasoning mix and cook 4 to 5 more minutes, or until cooked through, stirring.
  3. Meanwhile, prepare salsa: Combine chopped red onion, chopped avocado, chopped tomatoes, chopped cilantro and the juice of 1 lime in a bowl.
  4. Mix well, and season with salt and pepper to taste.
  5. Slice pita bread in half (toast first, if desired).
  6. Stuff with pork and salsa.
  7. Top with sour cream or Greek plain yogurt, if desired.
