Pork Pitas With Speedy Salsa
- 1 tbsp. olive oil
- 1 lb. pork tenderloin
- 4 tbsp. taco seasoning mix
- 1 red onion
- 1 avocado
- 2 tomatoes
- 2 tbsp. cilantro
- 4 piece pita bread
- Heat olive oil in large skillet over medium heat; add diced pork tenderloin and saut 3 to 4 minutes.
- Stir in taco seasoning mix and cook 4 to 5 more minutes, or until cooked through, stirring.
- Meanwhile, prepare salsa: Combine chopped red onion, chopped avocado, chopped tomatoes, chopped cilantro and the juice of 1 lime in a bowl.
- Mix well, and season with salt and pepper to taste.
- Slice pita bread in half (toast first, if desired).
- Stuff with pork and salsa.
- Top with sour cream or Greek plain yogurt, if desired.
