Jack Salmon Skewers

  1. Cut salmon into 56 even cubes.
  2. Cut 56 (1 1/2 inch) pieces of the tops of the onions.
  3. Mince rest.
  4. Combine all with the bourbon, syrup, soy sauce, dijon and pepper.
  5. Let stand 2 hours.
  6. Partially cook bacon.
  7. Cut into 56 pieces.
  8. Heat broiler.
  9. Drain salmon and onions, reserving marinade.
  10. Wrap each piece of salmon with a piece of bacon.
  11. Thread alternating with onion pieces onto soaked wooden skewers.
  12. Broil 8 minutes, turning once and basting with marinade.
  13. WOW!
