Melon Mousse
- 5 grams Gelatin powder
- 2 tbsp Water
- 200 grams Melon
- 10 grams Granulated sugar
- 1 tsp Lemon juice
- 50 grams Plain yoghurt
- 100 grams Heavy cream
- 10 grams Granulated sugar
- Dissolve the gelatin in water in a double boiler.
- Puree the melon in a blender or food processor, and mix in the lemon juice and granulated sugar.
- Add the yoghurt and mix well.
- Add the gelatin from Step 1, and mix well until until it thickens, then leave it to cool.
- Add the granulated sugar marked to the heavy cream, and whip until soft peaks form.
- Stir it into the bowl from Step 4 in 2-3 batches.
- Pour the mixture into the mousse cups and leave in the fridge to harden.
- Top with chopped melon and mint to finish.
