Ole Chicken Salad
- 1 pound Cooked, Shredded Chicken
- 1 can (15 Oz. Size) Black Beans, Drained And Rinsed
- 1 can (4 Oz. Size) Diced Green Chiles, Don't Drain
- 1 cup Shredded Monterey Jack Cheese
- 13 cups Sour Cream. I Use Light.
- 13 cups Mayonnaise (I Use Light)
- 2 Tablespoons Taco Seasoning
- 1 whole Lime, Juiced (zest Optional)
- In a large bowl combine cooked chicken, black beans, green chiles, and cheese.
- Stir in sour cream, mayonnaise, taco seasoning and lime juice.
- Combine well.
- Serve with tortilla chips or tostada shells and garnish with lime wedges and/or sliced olives.
