Low Carb/No Grain Cereal

  1. 1.Beat eggs whites until soft peaks form.
  2. 2.Add stevia, pumpkin pie spice and vanilla.
  3. 3.Add nuts to egg white mixture and mix well.
  4. Taste for sweetness.
  5. 4.Line a cookie sheet with parchment paper.
  6. (do not use wax paper!
  7. ).
  8. 5.spread granola evenly over parchment paper with spatula.
  9. 6.Bake in a preheated oven just below 225 degrees.
  10. 7.Cook for 80 minutes,stirring/breaking up every 20 minutes(set a timer).
  11. 8.Then you can turn off oven and leave for 1 hour or longer to continue to dehydrate.
  12. 9.Remove and allow to cool.Crumble/ break up with clean hands before placing in an air tight container.
  13. 10.Makes about 8 cups(serving is 1/2 cup).
