White Chili
- 1 lb chicken breast, cubed (boneless, skinless)
- 2 cups chicken broth, divided
- 2 (15 ounce) cans great northern beans, rinsed
- 1 cup chopped bell pepper
- 1 cup chopped onion
- 2 teaspoons minced garlic
- 2 teaspoons jalapeno chili, minced
- 2 teaspoons minced ginger
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 tablespoon cornstarch
- salt and pepper
- Combine all ingredients, except 1/2 cup chicken broth, cornstarch, salt and pepper in slow cooker.
- Cover and cook on low for 6-8 hours.
- Cook on high 10 minutes, stirring in combined remaining stock and cornstarch, stirring 2-3 minutes.
