Cameros Cheese and Apple Pastries With Honey Ice Cream
- 1 lb flaky pastry dough
- 1 lb fresh cameros cheese (fresh goat's milk)
- 6 cooking apples
- 12 cup sugar
- 12 cup cream
- 12 cup honey
- 3 cups vanilla ice cream
- Pre-heat the oven to 300 degrees.
- Finely chop the cheese and heat in a double saucepan with 1/2 cup sugar and 1/2 cup cream, stirring constantly until a smooth mixture forms.
- Roll out the pastry and cut into 6 rectangles.
- Make a few holes in it with a fork.
- Spread over the cheese mixture and arrange the sliced apple on top.
- Brush with beaten egg and bake for 15 minutes.
- In a small pan, heat 1/2 cup of water with the honey, stir until well-mixed and runny and let cool.
- Serve topped pastries with a spoonful of ice cream topped honey sauce.
