Baked Parmesan Roughy
- 34 cup crushed corn flakes
- 12 cup grated parmesan cheese
- 12 teaspoon salt
- 2 eggs, lightly beaten
- 2 tablespoons milk
- 2 lbs orange roughy fillets
- in a large resealable plastic bag, combine cornflakes, Parmesan cheese and salt.
- In a shallow bowl, combine eggs and milk.
- Dip fish fillers in egg mixture, then shake in cornflake mixture.
- Transfer to a greased 15 inch X 10 inch x 1 inch baking pan.
- Bake at 450 degrees for 15 - 20 minutes or until fish flakes easily with a fork.
