Peanut Butter And Banana Cookies(Diabetic)
- 1/4 c. butter or margarine
- 1/2 c. mashed ripe banana (about 2 medium bananas)
- 1/2 c. no-sugar-added natural peanut butter
- 1 egg
- 1/4 c. thawed frozen unsweetened apple juice concentrate
- 1 tsp. vanilla
- 1 c. all-purpose flour
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/2 c. chopped salted peanuts
- whole peanuts (optional)
- Preheat oven to 375u0b0.
- Beat butter in large bowl until creamy. Add banana and peanut butter; beat until smooth.
- Blend in egg, apple juice concentrate and vanilla.
- Beat in flour, baking soda and salt.
- Stir in chopped peanuts.
- Drop rounded tablespoonfuls of dough, 2 inches apart, onto lightly greased cookie sheets.
- Top each with one peanut, if desired.
- Bake for 8 minutes, or until set.
- Cool completely on wire rack.
- Store in tightly covered container.
- Makes 2 dozen.
