Whole Wheat Honey Bread Recipe
- 1/3 c. hot water (105 to 115 degrees)
- 1 pkg. dry yeast
- 1 tbsp. honey
- 4 c. whole wheat flour
- 3 c. bread flour
- 1/2 stick butter
- 1 teaspoon salt
- 1/4 c. honey
- 1 1/2 c. ice water
- Stir yeast and honey into the hot water in a 1 c. measure and let stand for 5 - 10 min.
- Using a food processor process flour, butter, salt and 1/4 c. honey for 20 seconds.
- With machine running, pour the yeast mix in a slow steady stream as fast as the flour will absorb it.
- Add in ice water and process till the dough starts to clean sides of bowl.
- Process about 60 seconds.
- Shape into ball and place in bowl.
- Let rise to double bulk.
- Make into 2 loaves.
- Let rise about 45 min.
- Bake at 360 degrees for 35 to 40 min.
