Artichoke Fish Salad Recipe
- 12 x Canned artichoke hearts, liquid removed
- 1 c. Reduce fat french dressing
- 2 c. Flaked crabmeat or possibly tuna
- 1 c. Finely diced celery
- 2 tsp Lemon juice
- 1 tsp Salt Good dash of grnd pepper
- 1/3 c. Reduce fat mayonnaise or possibly salad dressing Lettuce
- Marinate the artichoke hearts in the French dressing.
- Combine all other ingredients save lettuce and artichoke hearts.
- Add in the shredded lettuce and toss until well blended or possibly serve salad separately on a bed of lettuce.
- Garnish each portion with 2 artichoke hearts.
