Creamy Summer Slaw Recipe
- 1/3 c. mayonnaise
- 1/4 c. vegetable oil
- 2 tbsp. cider vinegar
- 1 tbsp. lemon juice
- 2 tbsp. sugar
- 1/2 teaspoon Dijon style mustard
- 1/2 teaspoon celery seed
- 1/4 teaspoon pepper
- Seasoning salt to taste
- 1/2 sm. cabbage, finely shredded (about 4 c.)
- 2 sm. zucchini, thinly sliced (about 2 c.)
- 2 sm. yellow squash, thinly sliced (about 2 c.)
- 1 onion, minced
- In large bowl, combine first 9 ingredients, using wire whisk; beat till blended.
- Add in cabbage, zucchini, and squash; toss with dressing to coat thoroughly.
- Chill at least 1 hour before serving.
