Jamaican Banana Fritters
- 3 overripe bananas, mashed
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 3 tbsp brown sugar
- 1/2 tsp vanilla extract
- pinch salt
- 3/4 cup all-purpose flour
- 2 tbsp oil (for pan frying)
- 1 granulated sugar for sprinkling when done
- Mash and mix all ingredients together (except oil)
- Heat oil in pan, and pan fry fritters like you would pancakes.
- If the batter doesn't ooze out it means they're done.
- Set on paper towel to drain and sprinkle with sugar while hot (so it's sticks to the fritter)
- ***note, you can add more or less of each ingredient to your taste.
- They are supposed to be dense little guys (as there is no egg) but delish alone or with ice cream*** enjoy!
