Butterscotch Cashew Bars
- 1 1/2 cups all-purpose flour
- 3/4 cup firmly packed brown sugar
- 1/2 cup Land O Lakes Butter, softened
- 1/4 teaspoon salt
- 1/4 cup light corn syrup
- 1 cup butterscotch-flavored baking chips
- 2 tablespoons Land O Lakes Butter
- 1 tablespoon water
- 1/4 teaspoon salt
- 1 1/2 cups cashew halves and pieces
- Heat oven to 350 F. Grease 13x9-inch baking pan; set aside.
- Combine all crust ingredients in bowl.
- Beat at low speed, scraping bowl often, until mixture resembles coarse crumbs.
- Press crumb mixture into prepared pan.
- Bake 10 minutes.
- Place all topping ingredients except cashews in 2-quart saucepan.
- Cook over low heat, stirring constantly, 4-7 minutes or until chips are melted and mixture is smooth.
- Stir in cashews until well coated.
- Spread cashew mixture over hot, partially baked crust.
- Continue baking 10-12 minutes or until golden brown.
- Cool completely.
- Cut into bars.
