Sticky Glazed Plum Sponge

  1. Preheat the oven to 180c/350f
  2. Using a 1.5 litre dish, lightly oil it and pour the syrup into the bottom
  3. Place the fruit skin side down in the bowl
  4. Mix all other ingredients in a separate bowl until fully combined
  5. Pour batter on top of the fruit and place into the oven
  6. Bake for 50 - 55 mins until pricking it with a skewer and it comes out clean
  7. While still hot place a plate on top, large enough to cover the bowl, and using tea towel or oven gloves to hold the plate in place flip it over
  8. Carefully remove the bowl.
  9. Slice up and serve while still warm with icecream or custard
