Sticky Glazed Plum Sponge
- 2 tbsp golden syrup/light corn syrup
- 1 1/2 cup plums (or apricots, peaches, nectarines etc)
- 150 grams self raising flour
- 75 grams fresh breadcrumbs
- 90 grams light muskovado sugar
- 5 grams ground cinnamon
- 30 ml vegetable oil plus extra for greasing the dish
- 175 ml milk
- Preheat the oven to 180c/350f
- Using a 1.5 litre dish, lightly oil it and pour the syrup into the bottom
- Place the fruit skin side down in the bowl
- Mix all other ingredients in a separate bowl until fully combined
- Pour batter on top of the fruit and place into the oven
- Bake for 50 - 55 mins until pricking it with a skewer and it comes out clean
- While still hot place a plate on top, large enough to cover the bowl, and using tea towel or oven gloves to hold the plate in place flip it over
- Carefully remove the bowl.
- Slice up and serve while still warm with icecream or custard
